We tapped our maple trees today. As soon as we drilled the hole for the spile, the sap started dripping out. We are having wonderfully cold nights and warm days- perfect for sap collecting. I’m not sure how the lack of snow in the northeast will impact the sap and eventual maple syrup, but we will see. I usually make 4-5 cups of syrup each year from two sugar maple trees in our yard. I haven’t invested in an evaporator yet… I just make it inside on my stove and only do it one day due to the sticky steam that fills the house.
