We tapped our maple trees today.  As soon as we drilled the hole for the spile, the sap started dripping out.  We are having wonderfully cold nights and warm days- perfect for sap collecting.  I’m not sure how the lack of snow in the northeast will impact the sap and eventual maple syrup, but we will see.  I usually make 4-5 cups of syrup each year from two sugar maple trees in our yard.  I haven’t invested in an evaporator yet…  I just make it inside on my stove and only do it one day due to the sticky steam that fills the house.   More on the maple syrup operation as the week progresses.
