Lemon Loaf Cake

This recipe was my favorite so far.  I love to make breads and pound cakes and this one was perfect.  It had just the right amount of lemony taste without being obvious.  I used my mixer to beat together the eggs and sugar.  Normally, I am too lazy to sift the flour but I did this time to mix the dry ingredients properly.  I have learned from other recipes in this book to follow directions closely.

This is a good cake to make quickly and can stand on its own.  However, I’d like to try some lemon frosting next time to fancy it up a bit.
