I’ve been baking with Tuesdays with Dorie for about a year now. I’ve had some hits (Finnish Pulla and Blueberry Nectarine Pie) and some misses (Cranberry Walnut Pumpkin Loaf). I can’t really say whether it was the recipe or me. The most likely culprit was me. You know what I am leading up to….. Foccacia was a miss.
I followed the recipe carefully, but for two exceptions. I cut the recipe in 1/2 and made two smaller foccacias and I didn’t mist the inside of the oven with water.
I am going to turn both of them into pizzas since they are rather flat and don’t have that nice bubbly crust. Mine rose nicely, but after 24 hours in the fridge, they didn’t rise on baking at all.

Mine didn’t rise during baking either, which kinda disappointed me! I like a nice, puffy focaccia, so this one didn’t win me over. I guess they can’t all be hits!

Sorry this was a miss for you! I think it would make a great pizza. Mine did rise in the oven….and we really enjoyed the focaccia.

I found that too, that the dough rose so nicely and then I thought they’d be great out of the fridge, but they never rose up again like before. And I think the slashing of the dough makes it worse. I will dimple next time, rather than slashing.

Even without the rise it looks great! I think this recipe was a lot of work for what it was. I dimpled rather than slashed and had a lot of patience for the fridge time. There are other, simpler recipes that work for focaccia that I would use before this one again.
